Rotisserie Chicken 5 Ways - Quick Meals Everyone LOVES
Rotisserie chicken can take your meal plan places in a hurry…The options for putting it to good use are endless. It’s also a great ingredient to use when you need dinner in a hurry!
Rotisserie chicken or shredded chicken for that matter is one of the most versatile, manipulatable proteins. (Protein is a key ingredient to losing fat and building lean muscle!) Chicken is a great source of fuel and has lots of bonus benefits too.

Here are 5 of our favorite ways to enjoy rotisserie chicken

1. Make a Quick Lettuce Wrap
Toss Rotisserie chicken in a little bit of coconut aminos or soy sauce, rice vinegar, and sesame oil. Heat through. Place chicken in a piece of butter lettuce and add thinly sliced peppers, green onion, and matchstick carrots. Top with a squeeze of fresh lime juice and add a little bit of natural peanut butter whisked into coconut aminos and honey.
2. Quick Chicken Tostadas
Toss rotisserie chicken in lime juice, kosher salt, and a little bit of chile lime seasoning from Trader Joe’s. Layer your chicken on an almond flour tortilla (crisp it up in an air fryer) or use a prepared crispy corn tortilla. Add black beans, shredded lettuce, cabbage, or spinach, and then build your favorite tostada from there. I like to add fresh radish, jalapenos, and diced tomatoes, too! The options are endless with a build your own tostada bar. Everyone will be satisfied!
3. Stuff A Sweet Potato
Bake a sweet potato to your taste. While it is baking, toss rotisserie chicken in your favorite BBQ sauce. (I use sugar-free Head Country.) When the sweet potato is ready, top it with the BBQ chicken, black beans, cilantro, green onions, and uncured bacon. There is no limit to how you can top this yummy dish.
4. Add it to Black Bean Soup
Adding rotisserie chicken to black bean soup ramps the protein way up and breaks up the texture of the soup too! You can use canned black bean soup (we like Amy’s) or homemade.
5. Chicken Salad
Buffalo Chicken Salad is one of my favorite types of chicken salad. In a big bowl, add ⅓ cup Frank’s Hot Buffalo Sauce, 3 celery stalks diced, ¼ cup matchstick carrots, and ¼ cup ranch dressing (I use dairy-free). Add all of the meat from a shredded rotisserie chicken or 4 shredded chicken breasts. Combine well and ENJOY!
