Quick & Yummy Apple Recipes

Apple “Tostadas”

Top thinly sliced apples (we like Honeycrisp) with …

  • Nut butter, Enjoy Life dark chocolate chips, and unsweetened coconut

  • Nut butter and granola

  • Nut butter, caramel sauce, and dark chocolate sauce

  • Crumbled energy bites (You can find this recipe in Let’s Eat!)

  • Granny Smith apples thinly sliced, topped with caramel sauce and chopped peanuts are so good too!

The options are endless!

Air Fryer Apples

Ingredients:

4 to 6 apples (Honeycrisp are my favorite) peeled, cored, and chopped into bite-sized pieces

¼ to ½ teaspoon ground cinnamon

Nonstick cooking spray

Spray the fryer basket with cooking spray. Place the chopped apples in the basket and sprinkle them with the cinnamon; toss to coat. Cook at 400°F for 12-14 minutes or until edges begin to brown, pulling the basket out and tossing/stirring the apples every 5 minutes or so. This will help them brown evenly. If you aren't eating them right away, place them in an airtight container. This will help them keep their moisture. ENJOY them with dairy-free whipped “cream,” a drizzle of honey or as is!

Cinnamon Apple Chips

This recipe is from my second cookbook - Let’s Eat MORE

Ingredients:

2–3 Honeycrisp apples, thinly sliced on a mandolin

1 teaspoon cinnamon

Preheat oven to 200°F. Line two rimmed baking sheets with parchment paper. Place thinly sliced apples in a single layer on each baking sheet. Do not overlap apple slices. Sprinkle apples lightly with cinnamon. Bake for 1 hour. Remove baking sheets from the oven. Place the baking sheet that was on the bottom shelf on the top shelf and vice versa. Bake for another 1 to 1 1⁄2 hours until an apple slice is crisp. To test, remove one slice from the oven and let sit at room temperature for 3 minutes. Once you are satisfied with crispiness, turn off the oven and leave apples in the oven for an additional hour to crisp up.

I’d LOVE to know what kind of apples you like (and how you prepare them!). Share with me here in the comments, or tag me in a post on Instagram.
